A Simple Taste of Autumn: Spiced Pumpkin Bread


As the air cools and leaves begin to turn, the kitchen calls us back with the promise of warmth and comfort. Autumn is the season of gathering—of filling our homes with the scents of cinnamon, nutmeg, and baked goodness. One of the easiest (and most rewarding) recipes to make this time of year is a classic Spiced Pumpkin Bread.

It’s simple, delicious, and makes the perfect companion to a cup of tea after a day in the garden. 🌿


Ingredients

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp cloves

  • 2 large eggs

  • 1 cup sugar (or ½ cup sugar + ½ cup brown sugar)

  • ½ cup neutral oil (like canola or sunflower)

  • 1 tsp vanilla extract

  • 1 cup pumpkin puree (not pumpkin pie filling)

Optional add-ins: ½ cup chopped nuts, dried cranberries, or chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.

  2. Mix the dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, and spices.

  3. Mix the wet ingredients: In a large bowl, beat eggs and sugar until light. Add oil, vanilla, and pumpkin puree, stirring until smooth.

  4. Combine: Add the dry mixture into the wet mixture and stir gently until just combined. Don’t overmix.

  5. Bake: Pour into the loaf pan and bake for 55–65 minutes, until a toothpick comes out clean.

  6. Cool & Enjoy: Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
